Chiodini mushrooms - named for their nail shape with small brown cap - grow in small bushes in autumn.

The upper part is consumed and they must be strictly cooked but do not worry: we give them preserved only in their liquid, steamed and seasoned without vinegar, try them sautéed or on pasta, lightly passed in garlic and oil and with a hint of gorgonzola spoon for a sweet - spicy contrast that will seduce you!
