Pa'ncucciato is an artisan panettone cake unique in its conception because it is made from the semolina of Cous cous that becomes sweet thanks to a procedure devised by Filippo La Mantia. Pantelleria sultanas, a prime selection of candied fruit, and organic orange and lemon syrups are just some of the ingredients that make Pa'ncucciato an authentic expression of the Sicilian territory. The slow artisanal leavening process gives the dough softness, lightness and high digestibility. On the crispy icing, a date stuffed with marzipan evokes the ideal embrace between Africa and Sicily, respectively the starting and ending point of cous cous in its thousand-year journey. This is why Pa'ncucciato is not simply a panettone, but at the same time a vision, a metaphor.
